I’m back with some easy peasy breakfast ideas. Personally, I love how breakfast can set the tone for how I feel the rest of the day. What I don’t love is spending a ton of time in the kitchen in the morning.

1. Lemony Greens — This is my current fave! Roughly chop some greens (kale, chard, collards, etc.). Drizzle with lemon juice (about 1 lemon for 2 cups greens), grind a little Celtic sea salt, and add a dash of red pepper flakes. Toss to mix. I usually do a big batch of the seasoned greens to keep in the fridge. When you’re ready to cook, melt some butter in a pan or skillet, then add a handful of greens and sauté until wilted. Try topping with some shredded Parmesan.

2. Smoothie — Smoothies are the OG easy breakfast. It can be easy to get stuck in a rut though, so try mixing things up a little. The components of a great smoothie are a base, fruit/veggies, and a thickener. Try using any milk or yogurt as a base (cow, sheep, goat, nut, etc.) or you could try water/ice. Your know what to do with the fruit/veggies! Thickening agents that work well are nut butters, protein powder, bone broth powder, or seeds.

3. Scrambled Eggs — You can prep scrambled eggs the night before and just add to a pan in the morning, but they’re usually pretty quick to throw together even if you didn’t premake them. Currently, I’ve been mixing an egg with 1/4 cup salsa, salt, and pepper. Once it’s plated, try topping it with some cultured sour cream. While the egg is cooking, you can slice up an avocado or toast some bread.

4. Nuts & Fruit — This gives you protein, healthy fat, and fiber, with a little fructose. The protein/fat helps the sugar from the fruit break down more slowly for happy sugar levels.
